This Scotch Egg is inspired by the creator’s time spent working in East Africa. A favourite in the region is a Sweet Potato and Spinach Curry; this Scotchee is an adaptation and the casing is flavoured with curried spinach, bursting with ginger, coriander stalks, cumin, mustard and spice.
